A Oliena per esempio la cottura avviene sempre nel forno a legna.<\/p>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\">L\u2019impasto del pane carasau va lavorato per bene e a lungo, per ottenere una pasta di consistenza omogenea, morbida e con un certo grado di elasticit\u00e0. Si tratta di un\u2019operazione molto faticosa che un tempo veniva fatta interamente a mano in particolari recipienti detti <em>laheddos<\/em>.<\/p>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\">L\u2019impasto viene poi suddiviso in palle di pasta che vengono avvolte nei teli per poi essere stese a formare delle sfoglie.<\/p>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\">Questa operazione richiede una notevole manualit\u00e0 perch\u00e9 bisogna rendere le sfoglie tutte uguali in grandezza e spessore. Fino a poco tempo fa (e forse ancora oggi) si incideva una croce nell\u2019impasto come auspicio per una panificazione senza problemi.<\/p>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\">Le sfoglie, poi, vanno adagiate nuovamente nei teli da pane in cui continuano a lievitare.<\/p>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\">A questo punto la sfoglia viene introdotta nel forno fino a gonfiarsi come una grande palla che viene estratta per essere aperta con un coltello e suddivisa in due sfoglie.<\/p>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\">\u00c8 prevista anche una seconda cottura detta <em>harasare<\/em>, necessaria per abbrustolire le sfoglie di pane che verranno poi prontamente sistemate in pile e pressate prima che si raffreddino. A questo punto il pane \u00e8 pronto e potr\u00e0 essere confezionato conservando intatte e a lungo le proprie caratteristiche.<\/p>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\">In Sardegna sono innumerevoli i tipi di pane prodotti. Ogni occasione ha il suo pane, ogni paese le sue tipologie. I pani qui non sono solo un alimento ma acquisiscono spesso significati simbolici.<\/p>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\">A Oliena sono molto importanti:<\/p>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\">&#8211; <em>sa pipinta d\u2019ogliathu<\/em> (che si ottiene dalla mollica rimossa durante la preparazione del pane carasau);<\/p>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\">&#8211; <em>sas partidas <\/em>(che si prepara solo in occasione di alcune feste molto importanti);<\/p>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\">&#8211; il pane tipo <em>corona<\/em> (che si prepara per commemorare i familiari defunti e viene regalato dalla famiglia a parenti, amici e vicini di casa)<\/p>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\">&#8211; <em>sas paneddas <\/em>(un pane morbido decorato che pu\u00f2 essere dolce, con zucchero e miele, o salato).<\/p>\r\n","protected":false},"excerpt":{"rendered":"<p>Questa qualit\u00e0, particolarmente gradita a chi, come i pastori, stava tanto tempo lontano da casa, \u00e8 forse anche la ragione della sua origine. Common throughout the island, every town has its unique version. In Oliena, they bake it in a wood fire oven.<br \/>\nThe dough is kneaded well and for a long time to get the right consistency and elasticity. It is a very hard-working process, once done only by hand using containers called <em>laheddos<\/em>.<br \/>\nThen the dough is divided into several balls wrapped with towels and then unfolded to form thin sheets.<br \/>\nEvery sheet needs to be the same thickness and size, so this process requires a good amount of skills. The makers used to engrave a cross in the dough until a while ago, hoping the bread would turn out fine \u2013 this custom is probably still in use today by some.<br \/>\nThen, the sheets are unfolded again in towels for bread and then left to keep raising.<br \/>\nNow each sheet is put into the oven, where it raises to become a ball, then taken out and cut into two sheets.<br \/>\nThen the bread is baked a second time \u2013 a process called <em>harasadura<\/em> \u2013 which gives the bread its crunchiness. Once it\u2019s done, the bread is left to cool down, then pressed into piles. Finally, the bread is ready to be consumed, and it will keep intact as just-made for a very long time.<\/p>\n<p><strong>Other breads<\/strong><br \/>\nSardinia is full of bread varieties. Each occasion calls for its bread; each town has its type. So bread here is not mere food. It becomes a symbol.<br \/>\nIn Oliena, the most important ones are:<br \/>\n&#8211; <em>sa pipinta d\u2019ogliathu<\/em> (made from the breadcrumbs taken out from the <em>carasau<\/em> bread);<br \/>\n&#8211; <em>sas partidas <\/em>(made only for special occasions);<br \/>\n&#8211; <em>corona type bread<\/em> (baked to commemorate the departed ones of the family and given out to relatives, friends and neighbours);<br \/>\n&#8211; <em>sas paneddas <\/em>(a soft, usually salted and decorated bread; it can also be found in its sweet version, with sugar or honey).<\/p>\n","poi_link":false,"sottotitolo":"Our daily bread","introduzione":"<p><em>Pane carasau<\/em> is undoubtedly one of the most famous and appreciated in Sardinia.
