{"id":1647,"date":"2021-05-26T19:55:22","date_gmt":"2021-05-26T17:55:22","guid":{"rendered":"https:\/\/oliena.it\/new\/food-and-wine\/i-dolci\/"},"modified":"2021-07-29T10:34:15","modified_gmt":"2021-07-29T08:34:15","slug":"sweets","status":"publish","type":"page","link":"https:\/\/oliena.it\/en\/food-and-wine\/sweets\/","title":{"rendered":"Sweets"},"content":{"rendered":"\r\n<p class=\"wp-block-paragraph\">A gennaio, alle persone riunite intorno ai grandi fuochi accesi in onore di Sant\u2019Antonio, viene offerto <em>su pistiddu<\/em> una sorta di focaccia ripiena di un impasto speciale fatto con sapa (mosto cotto) e miele.<\/p>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\">Nei giorni di Carnevale si possono gustare <em>sas rugliettas<\/em> \u2013 cordoncini di pasta intrecciata e modellata in varie forme, fritti e ricoperte di miele \u2013 e <em>sos<\/em> <em>gugligliones<\/em>, ripieni di pasta di miele e mandorle e ricoperti di miele.<\/p>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\"><em>Sas hasadinas<\/em>, tipiche della Pasqua, sono dolci caratteristici del mondo pastorale, caratterizzati dal sapore del pecorino fresco. A queste si affiancano <em>sas hasadinas salias<\/em>, una sorta di torta salata fatta di formaggio fresco da scaldare al forno.<\/p>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\">Durante l\u2019estate, e soprattutto ad agosto per la festa di San Lussorio, viene preparato il torrone di mandorle e miele dal colore bianchissimo.<\/p>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\">Quando la stagione comincia a farsi fredda, a novembre, in occasione della festa di Ognissanti, <em>sos papassinos<\/em> offrono un sostanzioso conforto grazie al loro impasto arricchito da mandorle, noci e uva passa.<\/p>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\">Le celebri <em>sevadas<\/em>, invece, fatte di pasta ripiena di abbondante pecorino fresco filante, si preparano tutto l\u2019anno. In passato rappresentavano un pasto completo, oggi un po\u2019 pi\u00f9 piccole e ricoperte di miele o zucchero vengono servite come dolce.<\/p>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\">E poi ci sono i dolci preparati per le feste private e i riti di passaggio, fra tutti citiamo soltanto <em>sos amarettos<\/em>, con il loro sapore inconfondibile dato da un delicato equilibrio di mandorle dolci e amare. Fragranti e soffici sono ideali per accompagnare un bicchierino di Gucciu, un vino bianco dolcissimo ottimo da sorseggiare anche a fine pasto.<\/p>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\">Gli altri, <em>pistoccos<\/em>, <em>meliheddas<\/em>, <em>marigosos<\/em>, <em>horiheddos<\/em>, <em>aranciada<\/em>, <em>pompia<\/em>, <em>idongiadu<\/em> ecc. sono altrettanto stuzzicanti e rappresentano per i viaggiatori un invitante incentivo a scoprire questa straordinaria cultura.<\/p>\r\n","protected":false},"excerpt":{"rendered":"<p>A gennaio, alle persone riunite intorno ai grandi fuochi accesi in onore di Sant\u2019Antonio, viene offerto su pistiddu una sorta di focaccia ripiena di un impasto speciale fatto con sapa (mosto cotto) e miele. People can taste <em>su pistiddu<\/em> there \u2013 a kind of focaccia filled with a special filling made of <em>sapa<\/em> (cooked must) or honey.<\/p>\n<p>At Carnival, you can find <em>sas rugliettas<\/em> \u2013 pass dough intertwined and shaped in various forms, then fried and covered with honey \u2013 and <em>sos<\/em> <em>gugligliones<\/em>, filled with honey dough and almonds, and then smothered with honey.<\/p>\n<p><em>Sas hasadinas<\/em>, made for Easter, are sweets coming from the world of shepherding, and they are uniquely flavoured with fresh pecorino cheese. There\u2019s also <em>sas hasadinas salias<\/em>, similar to a savoury tart made with fresh cheese and to be consumed heated up first.<\/p>\n<p>In Summer, particularly for the celebrations of <em>Saint Lussorio<\/em>, you can find pure white nougat with almonds and honey.<\/p>\n<p>When the weather starts to cool down a little in November, for the All Saints celebration, people make <em>sos papassions,<\/em> with their comforting and energising filling enriched with almonds, walnuts and raisins.<\/p>\n<p>The famous <em>sevadas<\/em> are filled with fresh melty pecorino cheese, and they are found all year round. Eaten as a complete meal in the past, nowadays they\u2019re a little smaller and consumed with sugar and honey, as a dessert.<\/p>\n<p>And then there are sweets made for private celebrations and rites of passage, one of these being <em>sos amarettos<\/em>, their unique taste coming from a perfect balance of sour and sweet almonds mix. They are soft and fragrant and go well with a small glass of <em>Gucciu<\/em>, a very sweet white wine that is great to finish the meal.<\/p>\n<p><em>Pistoccos<\/em>, <em>meliheddas<\/em>, <em>marigosos<\/em>, <em>horiheddos<\/em>, <em>aranciada<\/em>, <em>pompia<\/em>, <em>idongiadu<\/em> are as enticing as they are, and they can be an excellent way to discover this vibrant culture through food.<\/p>\n","poi_link":false,"sottotitolo":"Sweet dreams","introduzione":"<p>Sweets as well are made each for a special occasion, just like bread.<br \/>\nPublic holidays in Oliena \u2013 like Easter, <em>Sant\u2019Antonio Abate<\/em>, <em>San Lussorio<\/em>, All Saints and Carnival \u2013 are essential and, therefore, each has its special treats.
